Beef carcass grading in the cooler VBG2000 1. technical requirements - carcasses chilled in the cooler - ribbing cut between the 12th/13th rib - 1m rail space for camera operator - visuall inspection of rib eye surface from both carcass sides - speed up to 450 carcasses/900 sides per hour - linked to hot scale or IT system to get the hot carcass weight 2. measurements - rib eye area/dimensions, fat thickness, marbling, color 3. predictions and system outputs - rib eye area - preliminary yield grade = fat thickness - final yield grade 1, 2, 3, 4, 5 - quality grade standard, select, choice, prime - color and defects
