Now, gradually add the hot water, stirring after each addition to make a smooth sauce. Season with salt and pepper, then stir in the creamed coconut. Cover the pan and simmer the vegetables gently for 20 minutes or until they are all tender. (6) taste to check the seasoning and add a tiny bit of lemon juice to sharpen it. (7), peel the hard boiled eggs, slice them in a half lengthways, then arrange them in the curry making sure they are covered by sauce.
