7 Music Potato floddies 2 large potatoes, scrubbed with skins on a little flour salt & pepper pinch of mixed herbs butter, margarine or dripping for frying Method 1. Grate your scrubbed potatoes into a large bowl (coarse) 2. Add in salt and pepper and herbs 3. Sprinkle in flour and stir, keep adding until a batter begins to form and starts to bind together the grated potato 4. Non-stick pans work best, place fat into pan and heat on medium/hot 5. Drop in a large spoonful of the floddie mix and press down to flatten out 6. Fry until browned on one side (a few minutes or so) and turn. Fry the other side 7. Remove from heat. Eat!!! Each potato makes about 3 floddies so this recipe makes 6 or more floddies! 13 Show pictures of rationing book. Begin to make one with pictures of food, clothes and toys that the children might have been able to get. Choose one picture to stick as a reminder of lesson Plenary: Show clip from Carrie s War or Goodnight Mr Tom Art and design Design Technology Make a recipe from World War Two with appropriate level of support. 1) Make recipe (ingredients can be bought at PSHE Tesco trip) 2) Go to the allotment. Traditional Irish Soda Bread 1 lb of wholewheat flour (4 cups) 500 mls (2 cups) of buttermilk (1 teaspoon of vinegar added to fresh milk <<I used almond milk>> makes a good fake buttermilk) 1 tsp salt 1 tsp baking soda (bicarbonate of soda) Method 1. Place 2 cups of milk into a bowl, add 1 teaspoon of vinegar or lemon juice. Mix well and set aside for 15 minutes before using in recipe. Buttermilk is a necessary ingredient because it helps activate the baking soda to produce a rise 2. Meanwhile sieve your flour into a large bowl with the salt and baking soda 3. After 15 minutes whisk up the buttermilk with a fork to make sure it is mixed well and pour into a well in the centre of the flour 4. Mix up with a spoon until formed into a dough 5. Briefly knead to ensure it is mixed well (knead as little as possible) 6. Form into a round, very slightly flattened shape, place on baking tray, and with a sharp knife mark with a shallow cross in the middle (this allows for the dough to expand) 7. Oven should be pre-heated to 200 c (400 F) and the loaf placed in the middle to top half of the oven for around 45 minutes. Cover with aluminium foil if it begins to brown too quickly

Eggless sponge gone wrong 6 oz wholewheat flour 3 teaspoons of baking powder 2.5 oz margarine

16 2 oz sugar 1 level tablespoon of table syrup (or Lyons Golden Syrup) 1/4 pint milk sultanas optional jam for filling optional Method Sift the flour and the baking powder together, Cream the margarine, sugar and syrup together until soft and light, Add a little flour and then a little liquid, Continue to do this until until you have a smooth mixture. Grease and flour two 7 inch sandwich tins and divide mixture between them. Cook in centre of over at 200 celcius for minutes. The flour supplied to the public in the 1940 s, was a minimum of 85% wholewheat flour made from homegrown wheat (UK). It was said to have an unpopular grey appearance but I guess that really was all that was available and all recipes that called for flour would have been made out of this.. Wartime Scotch Shortbread Melt 4 oz margarine, add 8 oz plain flour and 2 oz sugar, mix well and knead until the mixture bins together. If it is a little dry crumble it again and add a splash of milk and re knead. Put in an ungreased baking tin and press mixture down firmly so it is about 1/2 inch thick. Prick the surface and then cut into portions. Bake in centre of moderate oven for 30 + minutes.
